3-4 medium sweet potatoes, peeled and diced
2 tablespoons coconut oil, melted
1/2 teaspoon kosher salt
¼ teaspoon cinnamon
¼ teaspoon curry, optional
Pinch of coarsely ground black pepper
Or use spices of your choice like paprika or smoked paprika, parsley
Preheat oven to 400°F.
Line a low-sided roasting pan with aluminum foil.
In a large bowl, mix sweet potatoes with melted coconut oil. Add spices and salt and pepper. Spread in an even layer on roasting pan (you might need two pans).
Bake for 25 – 30 minutes or until all the potatoes are tender when pierced with a fork or toothpick. Turn off heat and let the potatoes sit in the baking dish for at least ten minutes to cool before serving warm.
