1 can (14 ounces) coconut milk
zest of 1 lime
2 limes, juiced
¼ cup confectioners’ sugar
¼ cup shredded coconut
Puree all ingredients together. Pour into small popsicle molds or 3-ounce paper cups; insert wooden popsicle sticks. Freeze several hours, or until firm.
I am SO trying this recipe out! I love anything coconut/lime so this ought to be right up my alley.
