Pasta with Peppers

2 tablespoons olive oil
1 onion, chopped
2 teaspoons minced garlic
1 red pepper, chopped
1 yellow pepper, chopped
1 orange pepper, chopped
1 (29 ounce) can diced tomatoes
2 tablespoons tomato paste
1 teaspoon basil
1 teaspoon oregano
½ teaspoon pepper
1-1/2 bags (24ounces) pasta of your choice

Heat oil in a medium saucepan. Add onion, garlic and peppers and sauté until soft – 5 to 10 minutes. Stir in tomatoes, tomato paste and spices and simmer for an additional 10 minutes. Cook pasta according to package directions. Top with sauce. Serve with grated Parmesan cheese, if desired.
