Yield: 6 servings
Ingredients:
4 large sweet potatoes, unpeeled and diced
3 tablespoons olive oil
2 tablespoons peeled, chopped fresh ginger
3 tablespoons maple syrup
a pinch of ground cinnamon
a pinch of nutmeg
Directions:
1. Preheat oven to 400°.
2. Mix all ingredients in a large bowl until sweet potatoes are fully coated, then place on a roasting pan and bake until sweet potatoes are soft, about 35-40 minutes, tossing occasionally. Serve immediately.
