1 large tomato, grated (skin discarded)
2 tablespoons lemon juice
2 tablespoons minced shallot
1 tablespoons chopped chives
1 teaspoon kosher salt
1/3 cup olive oil
5 cups Romaine lettuce
1 cup cherry or grape tomatoes, halved
½ cup kalamata or green pitted olives
½ cup chopped cucumbers
In a small bowl, whisk grated tomato, lemon juice, shallot, chives, and salt. Gradually whisk in olive oil until well blended and emulsified.
In a large salad bowl, toss romaine, tomatoes, olives and cucumbers. Pour dressing over salad. Toss and serve immediately.
