3 tablespoons white miso
1 – 2 tablespoons finely minced ginger
1 tablespoon white vinegar
6 tablespoons water
½ cup canola oil
6 cups baby spinach lettuce
½ cup shredded carrots
½ cup thinly sliced cucumber
½ cup snow peas
¼ cup toasted peanuts or almonds, toasted
1 tablespoon sesame seeds, toasted
In a small bowl, whisk together miso, ginger, vinegar and water. Slowly whisk in oil until blended.
In a large salad bowl, mix spinach, carrots, cucumber, snow peas, peanuts and sesame seeds. Pour dressing over salad. Toss and serve immediately.
