Grilled Chicken with Zaatar and Lemon


This is it. I posted on facebook that I was trying a new recipe for grilled chicken that had zesty zaatar spice and lemon. It was easy and super tasty. Chicken with zaatar is not the most common combination but it works really well on the barbeque.
Serves 8

1/2 cup olive oil
4 tablespoons zaatar spice
4 tablespoons lemon juice
2 teaspoons lemon zest
2 teaspoons minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
8 pieces of chicken
2 lemons, cut into 4 wedges
2 large Vidalia onions, cut into thick slices

Whisk together oil, zaatar, lemon juice, zest, garlic, salt, and pepper in a large bowl. Add chicken and turn to coat. Let marinate for at least 1 hour.

Heat grill to medium – 350 to 450 degrees. Grill chicken, skin side down, until browned, 5 to 8 minutes; watch for flare-ups and move chicken to a cooler spot if needed. Turn chicken and grill until cooked through, about 4 minutes.

Grill lemon wedges and onion in last few minutes, turning once, until grill marks appear on the lemon and the onions are cooked through. Serve with chicken.

  1. Zaatar is a wonderful combination of spices sold here in Brooklyn in all of our local kosher grocery stores. Its also good to mix it with olive oil, salt and lemon juice and use as a dip with crackers.
    I’ve made this type of grilled chicken- my only advice- make sure the chicken pieces are dried with a paper towel before you marinate.

  2. I use zatar often. It’s great to sprinkle in a greek salad as well. I also use in on baked herb chicken. It’s a great spice to work with.

    • I would use an indoor grill pan. If you do not have one, then bake it in the oven at 375 for approximately 1 hour, depending on what type of chicken pieces you use, less for cutlets, more for large breasts with wings.

  3. I actually made this in my Instant Pot! 🙂 Made the marinade, tossed the chicken in. Set for 10 minutes manual. It was fantastic… though I do like it grilled better for the crispy outside. I need to tell you this is a staple recipe in our house. We make it probably 2x/month!
