2 tablespoons oil (add more if needed)
1 onion, thinly sliced
2 bunches spinach, shredded (chiffonade)
½ cup shredded coconut
2 tablespoons lime juice
½ teaspoon salt
½ teaspoon pepper
Heat oil in a large skillet over medium heat. Sauté onion until it begins to brown. Add remaining ingredients and sauté until soft.
