Chocolate Chip Molten Cake

Makes 6 – 8
2-½ cups flour
1 teaspoon salt
½ teaspoon baking soda
1 cup margarine
½ cup sugar
1 cup brown sugar
4 eggs
2 teaspoons vanilla extract
2 cups chocolate chips
Bar of baking chocolate

Preheat the oven to 350 degrees. Spray 10 ramekins (standard 4 ounce capacity) with non-stick cooking spray.

With and electric mixer, beat the margarine and the sugar until fully blended. Add the eggs, one at a time and the vanilla extract. Add the flour, salt, and the baking soda. Mix in the chocolate chips. Divide the batter evenly and pour into prepared ramekins. Place a piece of chocolate in the center of each ramekin, pushing it into the batter so that the batter covers it. Bake for 20 minutes. They should look undercooked in the center and cook on the edges. Serve warm with pareve vanilla ice cream or pareve whipped cream.  If you do not have ramekins, use standard muffin cups but reduce the cooking time by about 3 – 5 minutes.

  1. when are the chocolate chips added? Is that different than the piece of chocolate placed in the center which appears to be from the bar of baking chocolate? I have a recipe where the chips are melted in a double boiler and added to the batter.

  2. Please amend the recipe to tell us what size ramekins are you recommending? If you have a different size, or want to use large muffin cups, how would you change the cooking time to accommodate? Thanks so much- I can’t wait to make them!

  3. What are ramekins and where can you buy them? Are mini-muffins tins also good?
    I have both, regular and mini-muffin tins? What would you recommend?

    • They sink because they are heavy and do not bind well to anything. Mixing them with 1 -2 tablespoons of flour should work. Try it again
