Mesclun Salad with Apples and Esrog Vinaigrette

Ingredients
6 cups Mesclun Lettuce
1 apple, sliced thin
¼ cup toasted almonds or pine nuts
¼ cup golden raisins (optional)
Estrog rind

Dressing:
2 teaspoons Dijon mustard
2 tablespoons or more Estrog juice (or lemon juice)
kosher salt
1 tablespoon balsamic vinegar
½ – 2/3 cup extra virgin olive oil

Mix dressing ingredients together. Toss into salad and serve.
