1 cup tart dried cherries
4 boneless, skinless chicken breasts, cooked and torn into pieces
3 stalks celery, chopped
2 Granny Smith apples, chopped
1 cup chopped toasted pecans (candied if you like extra sweetness)
1¼ cups mayonnaise
2 tablespoons raspberry vinegar
Salt and pepper to taste
Combine the cherries, chicken, celery, apples and pecans in a large bowl. Whisk together the mayonnaise, vinegar, salt and pepper and toss gently with other ingredients. Chill. Serve on a bed of lettuce.
really really good!
sounds yum! you can probably substitute craisins, too, I would think
What would you substitute “raspberry vinegar” with. I haven’t seen it in Israel.
It would be fine with red wine vinegar or cider vinegar.

You can easily add raspberry flavor by adding natural raspberry drink concentrate (yes, petel!) use vitaminchik and you’ll never know that we don’t have raspberry vinegar here!
