This is the perfect ingredients and colors of the Yom Tov season.
4 Granny Smith apples, cut into cubes
½ cup dried cranberries
½ cup toasted chopped almonds
½ cup pomegranate seeds (optional but good)
1 head romaine, chopped
Dressing:
2 tablespoons Dijon mustard
1 tablespoon honey
1/3 cup olive oil
1 tablespoon nondairy creamer
Whisk together dressing ingredients and toss with salad. Serve.
Can i substitute the creamer for rice milk?

It depends on the size of the head of romaine but approximately 12. Have a wonderful Yom Tov!!

Sure, use soymilk instead or rice milk
This looks delicious, but many people do not use nuts on Rosh HaShana.
The nuts that are not used for Rosh Hashanah are traditionally walnuts and hazelnuts; the rest are fine.
Very pretty, but the granny smith were too sour with the dressing – perhaps a sweeter apple would have been better.
Delicious with Fuji apples and almond milk instead of pareve creamer. I also added diced mangoes and strawberries. Yummy and pretty.
