8 to 12 medium baking potatoes, peeled and cut into chunks
1 (8 ounce) package cream cheese, softened
1 cup sour cream
½ cup butter
In a large saucepan, cover potatoes with water and bring to a boil. Reduce heat and simmer, partially covered for 20 to 25 minutes, until potatoes are soft. Drain off liquid and either mash (if you like slightly chunky) or beat (if you like super smooth) in cream cheese, sour cream and butter. This is NOT low fat but it’s really good.
