2 (6 ounce) packages baby spinach
2 avocadoes, thinly sliced
½ cup dried cherries
Dressing:
¼ cup water
¼ cup lime juice
1/3 cup sugar
¼ cup canola oil
1 tablespoon poppy seeds
Using a hand blender (available in our SHOP), blend together the water, lime juice and sugar. Gradually add oil until emulsified (thickened). Stir in poppy seeds. Toss with salad ingredients.
