4 packages ramen noodles, cooked without the spice packets and drained
4 bags shredded purple cabbage (1 small head)
¼ cup crunchy peanut butter
2 teaspoons minced garlic
1 teaspoon freshly grated ginger
1 tablespoon brown sugar
1 tablespoon rice vinegar
¼ teaspoon hot chili pepper flakes
¼ cup hot water
¼ cup roasted peanuts, if desired
Whisk or puree dressing ingredients. Pour over cabbage and mix. Place cabbage atop ramen noodles and gently toss. Garnish with roasted peanuts.
