Carrot Kugel


4 jars (about 3.5 ounces each) baby food carrots
½ cup canola oil
2 cups sugar
4 eggs
2 cups flour
3 teaspoons baking powder
2 teaspoons vanilla

Preheat oven to 350 degrees. Combine all ingredients, mixing well to make sure there are no lumps. Pour into 9×13-inch pan and bake for 1 hour. Can also be made into muffins (makes about 24). Cool on rack. This is delicious warm or at room temperature.

      • This is cake like so it does freeze. Remember to make sure that it is fully cooled before freezing. Cover and freeze. Defrost in the refrigerator. It is better fresh or made a few days ahead of time, but is okay to freeze.

    • You can also, peel and cut carrots into 1-inch pieces, then boil until softened, about 15 – 20 minutes, then puree, to make pureed carrots and use them. I have never tried it with just grated carrots, and not sure it will completely bind. There is enough oil and eggs so it should work. Let me know.
