Carrot Kugel


4 jars (about 3.5 ounces each) baby food carrots
½ cup canola oil
2 cups sugar
4 eggs
2 cups flour
3 teaspoons baking powder
2 teaspoons vanilla

Preheat oven to 350 degrees. Combine all ingredients, mixing well to make sure there are no lumps. Pour into 9×13-inch pan and bake for 1 hour. Can also be made into muffins (makes about 24). Cool on rack. This is delicious warm or at room temperature.

    • You can also, peel and cut carrots into 1-inch pieces, then boil until softened, about 15 – 20 minutes, then puree, to make pureed carrots and use them. I have never tried it with just grated carrots, and not sure it will completely bind. There is enough oil and eggs so it should work. Let me know.
